A possibly naive question - are there any especially popular visualisation tools/techniques to represent visitor pathways through museums/galleries? Any recommended reading in this area?

Yes there is such tool.
Not only the path but the way you are looking, the "visual behavior"
And it can reconstruct this path according your own point of view and preferences and send it to you threw Internet.
It's name is Percipio (see my page).
It is based on the geovector.

The topic of on-site visitor research is of particular interest to us as we are developing digital survey systems, here is the first http://www.digitalview.com/digital-customer-questionnaires - it would be great to get comments as to the requirements for using this in museums.
